Grilled Fish Wrap Sandwich with Fresh Mango Salsa
This fish wrap sandwich made from Alaskan pollock burgers is delicious, easy to make and packed full of nutrients.
- 4 Trident Alaskan Pollock Burgers
- lavash bread, tortillas, or sandwich wraps
- 1 c fresh mango, peeled, cored and diced
- 1 lime, divided
- 2 tbsp minced jalapeno
- 1/2 c diced red onion
- 1/4 c chopped cilantro
- 1/4 c mayonnaise
- 1/2 tbsp hot sauce
- 1/2 tsp salt
- 1 avocado, sliced
- 1/4 head purple cabbage, thinly sliced
For the salsa, combine diced mango, the juice from 1/2 a lime, jalapeno, red onion, and cilantro. Set aside.
For the mayo spread, whisk the hot sauce, salt, and juice from 1/2 a lime into mayo until combined.
Cook pollock burgers according to package instructions.
Once burgers are cooked, slice each burger into four slices and place on wrap. Add some mayo spread, sliced cabbage, sliced avocado, and mango salsa.
Roll up and slice on the diagonal. Enjoy!
