Grilled avocados make a great summer side dish, appetizer, or light lunch. You can even grill some avocado halves at a BBQ and have a "toppings bar" and let everyone pick out their own toppings!
Cut each avocado in half and remove the pit. Place the avocado halves flesh-side down onto a preheated grill for 3-4 minutes or until grill marks appear (the grilling time will depend on how hot your grill is, so make sure to monitor).
Remove avocados from the grill and squeeze some fresh lime juice over the top. Sprinkle with salt, cumin, and chopped cilantro. Fill center cavity with some diced tomato, or other toppings of your choice.Enjoy immediately, scooping soft avocado out with a fork, or by mashing the avocado to make personal guacamole.
Notes
Topping and filling ideas: Diced scallion, diced red onion, shredded cheese, cubed queso fresco, cojita cheese, crumbled feta, crumbled cooked bacon, diced ham, cooked quinoa, black beans or black bean salad, corn, salsa, sour cream, tuna salad, sliced jalapenos (fresh or canned), tajin seasoning (this stuff is AWESOME!).Grilling avocado without a grill: You can use a grill pan or an indoor grill. The nutrition fact estimates are only for the avocado and do not include any salt or toppings, since everyone will use different amounts.
