Easy weeknight pork chops

Easy weeknight dinners are my favorite types of recipes to create and share.

If I can put a nutritious meal on the table without spending a ton of time in the kitchen (and my whole family actually eats it and even loves it), I feel like an Iron Chef.

These easy, yummy panko pork chops can be whipped up any night of the week in 30 minutes or less. You will absolutely LOVE the crispy toasted panko breading on top of these pork chops.

What is in Poultry Seasoning?

I used poultry seasoning in this recipe, which is a combination of dried basil, rosemary, sage, marjoram, thyme and oregano.

You can get some on Amazon, but even if you don't have poultry seasoning on hand, you can easily swap in any combination of these herbs, or even just one of them, and it will still turn out great!

Instructions

Step 1: Preheat oven to 375 degrees Fahrenheit.

Step 2: Place pork chops on a foil-lined baking sheet. Sprinkle with salt and spread a layer of Dijon mustard over each pork chop.

Step 3: In a small bowl, combine the breadcrumbs, garlic powder, poultry seasoning, salt, and pepper.

Step 4: Heat the olive oil in a skillet. When the oil is warm, add the breadcrumb mixture. Saute for several minutes, stirring constantly, until breadcrumbs just start to turn golden brown.

Step 5: Place a generous amount of toasted breadcrumbs on top of each pork chop. Bake at 375F for 20 minutes, or until pork chops are cooked through. (Cooking time may vary depending on the size & thickness of your pork chop).

I don't have Dijon mustard just regular mustard and dry mustard can I use either of those or something else in place of the Dijon mustard?

They looked good in the photo but my son and didn't like the taste. The cut was just a regular cut but I did have to cook for 40 minutes. I will not make again.

Sorry to hear that! What was off about the taste? Did you like the flavor of the seasonings that were used? Did it need more salt? What thickness is a "regular" cut in your store? Have you tested your oven temperature for accuracy? Knowing all this will help me troubleshoot this recipe, if you do want to cook something similar in the future.

This was delicious! I used Maille x Mike's Hot Honey Dijon Mustard which gave it a little extra sweetness & zing. I also used pre-seasoned Italian Panko. Since I used thin pork chops, I only baked for ten minutes (and next time I might try 8-9 instead.) Will definitely make again because it was so easy and tasty.

We don’t use mustard in our home. I read that mayonnaise is an ok substitute. Will this be ok?

I haven't tried this without mustard, but it should be OK with mayo. I would just add a tiny splash of vinegar (apple cider vinegar probably) and some ground black pepper to the mayo to give it a bit of a kick and acidity like mustard has. Let me know how it turns out!

Can I substitute the breadcrumbs with panko breadcrumbs? Do I still toast the panko? Also, is only one side of the pork cutlets breaded?

The recipe calls for panko breadcrumbs, so you should be good using panko breadcrumbs! And yes, I only bread one side, but feel free to bread all of it if you prefer. If breading all over, just bake it on a wire rack so the bottom doesn't get soggy. And of course, you'll need more ingredients for coating the pork chops and for the breading itself.
